Summer Salad (from Machelle-and Megan too)
2-7 ounce boxes of ring pasta, cooked and rinsed in cool water
2 cups diced cucumbers
2 cups diced carrots
1 cup diced celery
1 bunch green top onions, thinly sliced
1/2 cup vinegar
1-1/2 cup sugar
1-1/2 cup mayo (not Miracle Whip)
1 tsp salt
1/4 tsp pepper
1/2 tsp nutmeg (I didn't use since Machelle didn't use)
Mix all together and refrigerate over night.
I also cheated and used those shredded carrots-just chopped them all up-works great.
I feel the need for some more wine: Drama Queen is going to prom and Hermit Crab now has a boyfriend and wants to bring him home at semester break to meet us. I have already stated that statistically she will meet her future hubby in college, and I forbid her to move to his hometown. Since he lives in the Northwest Territories, like 5 million miles from Minnesota. She made circling motions next to her head while talking to me. At least I'm sure she did-we were texting-but I know she did.
Where is that corkscrew?

you know this reminds me of a salad i saw on diners, drive ins & dives. it was a kicked up mac salad with grated cheddar cheese. well i searched for the recipe on foodnetwork site, found it and fell in LOVE with it. the photo i took was horrid so i never posted it, but the salad was amazing. it was full of fat and flavor....but what isn't? ha ha

Leslie, my hubby was concerned for my well being so stopped and got me beer :) But the prom-going youngest found a dress for $17 at Macy's-crazy! But then proceeded to spend the rest of the cash I gave her on other stuff.....gotta go grab another cold one....
1 1/2 cups sugar? Really? WOW! That must be one sweet salad!
I really like a lot of salads, but pasta salad isn't usually one of them. It's pretty though :-)
for a split second, i thought cheerios were involved and i was flummoxed. :) nope, i've never seen ring pasta except in spaghetti-o's, but they work quite nicely in your salad!
